Extremadura, settled by the Romans and home of the Conquistadors - often thought to mean "very hard", which would be appropriate for this arid, barren landscape, but is actually "far from the (river) Duero", which was the boundary of Castile and "civilised Spain". Nonetheless, the region today produces some of Spain's finest food. The Iberian black pigs which roam the oak forests and feed on acorns produce the most exquisitley flavoured ham and pork. Extremadura is also famous for its lamb, whilst the area around La Vera produces pimentón - the wood-smoked paprika which is used to flavour chorizo and many Spanish dishes.
